Japanese desserts and sweets is a recent concept! Unlike in the West, it is not a common notion in this Asian nation to have desserts after a meal. This is also why dessert menus are not to be expected in a Japanese restaurant.
Originally, Japanese desserts were limited to the snacks offered during elaborate tea ceremonies, with the traditional intension to enhance the taste of special tea. These are not the typically sweet ones but are savoury in flavour. But now, gradually this custom is undergoing a change, due to which a number of relishing desserts are being prepared and served.
Until sugar got introduced, a lot many Japanese desserts were prepared with Azuki beans. It‘s value has not yet vanished completely and can be still seen being used as an important topping or filling. Other than this; Mochigome, Matcha Tea, Kinako, Agar etc are few popular ingredients that plays an integral part in the formation of Japanese desserts.
